Ray Ray's Bacon Wrapped BBQ Meatballs
Ingredients:
3 lb Ground Beef
2 pkg Thick Cut Bacon
1 can evaporated milk
2 large eggs
1 cup cracker crumbs
1 cup quick cook oats
1/2 tsp garlic powder
1/2 cup fine chopped onions
1/2 tsp pepper
5 tsp Ray Ray's All Purpose Seasoning
6 oz sharp cheddar cheese cubes (optional)
1 1/2 cups Ray Ray's BBQ Sauce
Directions:
Place ground beef, evaporated milk, eggs, cracker crumbs, oats, garlic powder, pepper, Ray Ray's Seasoning and onions into a bowl and thoroughly mix the ingredients together. Roll into approximately 24 golf sized balls. Make a hole into the center of the ball and insert cheese cube and pinch the ball shut. Shape back into a ball. (Cheese is optional) Cut the bacon in half and wrap each meatball with a half slice of bacon.
Place meatballs about an inch apart on a foil covered pan with the bacon seam side down. Bake at 350F degrees for 20 minutes in center rack. *You can also place the meatballs on a cookie rack in the pan. This will keep the meatballs out of the bacon grease.* At 20 minutes, take pan out and drain out bacon fat. Brush on BBQ sauce and place back into the oven for 10 minutes and brush on more BBQ sauce. Drain out pan again if needed.
Brush on more BBQ sauce and place back into the oven for 5 minutes. When we do these on smoker, we keep temp @ 250 degrees using cherry and hickory wood. We cook them longer till bacon is done and internal temp is at least 160 degrees.
These are always a favorite at get together's and are usually the first thing gone.
